Locavores are people who derive their foods from local sources. They do this for a variety of reasons, including; They are fresher (and last longer), they preserve green space and farmland, local farms have less negative environmental impact, they promote food safety, they create community, supports our local economy and promotes variety.
Locally grown produce is also healthier for you. When you buy a tomato from a grocer, there is a real good chance that tomato came from somewhere else. The problem is that if you pick a ripe tomato in San Diego, it is very hard to get it to Texas before it begins to decompose. What happens is the tomatoes end up being picked while they are still green, then put in a big room and gassed with the same gas that comes from your exhaust pipe on your car. This is done to turn their skin cherry red, much like it would your skin if you were in your garage with the door closed and the car was running (Don’t try this, just trust me). So you are buying a green tomato with a pretty red skin. A fruit or vegetable does not contain their vitamins and minerals unless they are allowed to ripen naturally. An unripened fruit does not magically inherit these vitamins by virtue of artificially turning the skin red. Which is sad, because in the miracle of tomatoes, the more you eat, the lower your chances for several different types of cancers, including prostate lung and stomach cancer.
Lycopene is the ingredient that turns the skin red NATURALLY, and not only helps defend against cancer, but is a powerful anti-oxidant that fights free radicals in your sytem. Cooked tomatoes contain even more lycopene, because cooking breaks down the cell walls and allows it to be better absorbed by your body. A medium sized, naturally grown and ripened tomato also contains 40% of the RDA for Vitamin C and 20% of the RDA for Vitamin A.
Not only do the Farmers of Coppell Farmers Market have freshly picked, locally grown and ripened tomatoes, but other veggies include spring onions (perfect for salads), new potatoes, sweet potatoes, greens - spinach, chard, mustard and collards, turnips and turnip greens.
